4 oz cultured butter with sea salt crystals, softened
1/4 cup mixed herbs (thyme, rosemary, and parsley), chopped
2 cloves garlic, minced
1 teaspoon freshly ground pepper
1 tablespoon lemon zest
1 chicken (3 to 6 pounds)
