Fresh Crottin

Vermont Fresh Crottin is a fresh goat cheese made in the traditional French Crottin de Chavignol recipe. This fresh cheese is the same hand crafted cheese as our Bijou, only the early stage before aging. The milk is slowly coagulated overnight by adding lactic cultures after pasteurization. The freshly made curd is then drained in cheesecloth until the next day when cheeses will be shape by hand. Fresh crottin are packed in a easy to use “muffin tray” keeping the cheese protected from our creamery to restaurant cheeseboard and retailer cheese counter.
We still use the secret cultures, yeast and mold that are added to the milk in the early stage of the maturation. We wrap the cheese just after being shaped by hand and skip the aging in our cave, to deliver a fresh, slightly floral and lemony, creamy cheese with a nutty finish.
