Fresh Goat Cheese Flatbread

  • 4 oz. Pancetta, diced and rendered
  • 1 lg. onion, caramelized
  • 3 T fig spread
  • 4 oz. Fresh Goat Cheese
  • 1 store bought pizza shell
  • Render pancetta in large pan. Remove with a slotted spoon and drain. 
  • In same pan with pancetta drippings caramelize onions until brown and soft. Set aside. 
  • Spread fig jam on pizza shell. Sprinkle pancetta and onions evenly over the jam. Crumble the fresh goat cheese on top of the flatbread. 
  • Bake according to pizza package instructions.
