- 4 oz. Pancetta, diced and rendered
- 1 lg. onion, caramelized
- 3 T fig spread
- 4 oz. Fresh Goat Cheese
- 1 store bought pizza shell

- Render pancetta in large pan. Remove with a slotted spoon
and drain.
- In same pan with pancetta drippings caramelize onions until brown
and soft. Set aside.
- Spread fig jam on pizza shell. Sprinkle pancetta and
onions evenly over the jam. Crumble the fresh goat cheese on top of the flatbread.
 - Bake
according to pizza package instructions.
