  • 3 cups AP flour
  • ¼ tsp. salt
  • 1 cup unsalted butter
  • ½ cup granulated sugar
  • 2 large eggs
  • Place butter in the bowl of electric mixer and beat until softened. 
  • Add sugar and beat until light and fluffy. Add eggs one at a time until just incorporated. Add flour and salt just until it forms a ball. 
  • Flatten into a disk, cover with plastic wrap and refrigerate for 30 minutes. 
  • Once chilled cut dough in half. 
  • Use one half to roll out for the Blueberry & Mascarpone Tart and the other rolled into a cylinder for Simple Shortbread cookies.

 


Notes

Simple Shortbread Cookies

  • ¼ cup sanding sugar
  • Preheat oven to 400 degrees. Cut cookies from chilled cylinder in ¼” rounds. 
  • Place sugar on a plate. Press tops of cookies into the sugar and place sugar side up onto a parchment paper lined cookie sheet. 
  • Bake for 12 min.

*sanding sugar can be replaced with pecan/walnut halves.
