
The Harvest is Here
Here in Vermont the days are getting a little bit shorter and gardens and farm stands are overflowing with produce. These are the days we wait for all growing season long and we’ve pulled a few of our favorite recipes to help you savor every bite of this harvest time of year. You know, that fleeting time of year where every slice of tomato is perfect, and the kale and root vegetables are plentiful. Soon apples and pumpkins will be everywhere and we’re here for it.
As someone who enjoys cooking and baking, this change in seasons is always welcome. The cooler weather and slightly shorter days reinvigorate my food prep inspiration and after a hot summer of salads and thick slices of watermelon, I can’t wait to take to the kitchen to make soups, roasted vegetables, and pies. That first cold snap over a weekend basically guarantees I’ll spend at least a day causing a ruckus in the kitchen making bread, cookies or something that needs to simmer for a few hours. If I was an animal, clearly I’d be the kind that stores food away for winter.
You may not be into cooking all day long like I sometimes do, it’s cool I get it, however I highly recommend checking out the recipes below because they’re some of our favorites that let the harvest produce shine, and they won’t take all day to make. You don’t want to miss dishes like a summer tomato galette, root vegetable galette layered with fresh goat cheese, everything bagel roasted carrots or a decadent apple skillet cake topped with a dollop of cool crème fraîche. This time of year is fleeting, so let’s savor every hearty bite we can get.
