Strawberry Shortcake with Vanilla Crème Fraîche

Summer berries + biscuits + Vanilla Crème Fraîche = The perfect start to summer.
In my mind, strawberry shortcake is the perfect summertime dessert... or breakfast (please don't judge). It evokes childhood memories of sneaking just a little more whipped cream when no one was looking. Well, old habits die hard and the same scenario plays out today as an adult, except the traditional whipped cream has been replaced with our Vanilla Crème Fraîche. This slightly sweet, vanilla laced crème fraîche elevates the dessert to a whole new level — an American original with a French twist.
The method is pretty simple. Start with about a quart of berries to make 4 servings. Use strawberries, blueberries, raspberries, whatever looks good, or a combination. Wash, hull and slice as needed. Place in a bowl with a sprinkle of sugar to get the juices flowing and allow to sit for an hour or two in the refrigerator. Whip up a batch of your favorite biscuit or poundcake recipe. Here's one from Smitten Kitchen that's pretty awesome. You could always take the store bought route in a pinch (we won't judge). Split four buscuits in half and place on a plate. Spoon the berries over the biscuits and top with Vanilla Crème Fraîche. So good!
