Cauliflower and Celeriac Mash with Crème Fraîche

A twist on the comforting warmth of mashed potatoes, this dish marries the mild butteriness of cauliflower with the refreshing taste of celeriac. Mixed generously with crème fraîche and topped with even more, this dish has quickly become a Creamery favorite. From our friends at Sweet Paul.


1 large head of cauliflower

1 small celeriac

2 tablespoons olive oil

1 cup Vermont Creamery Crème Fraîche

Salt and pepper

Fresh thyme


  • STEP 1

    Cut cauliflower into florets. Peel and dice celeriac into 1/2-inch cubes. Place into large pot and cover with water. Boil vegetables about 10 minutes or until soft but not mushy.

  • STEP 2

    Drain water. Use an immersion blender to process vegetables until nearly smooth or the consistency you like for your favorite mash. Add olive oil and half of crème fraîche. Mix well and add crème fraîche until you have a smooth mash. Season with salt and pepper.

  • STEP 3

    Spoon into a serving bowl and top with pepper, fresh thyme, and a dollop of crème fraîche.
