Cherry Clafoutis with Crème Fraîche

Inspired by the fresh produce of the summer season, this cherry clafoutis uses amazingly sweet, fresh cherries baked in a crème fraîche custard.  


1 pound cherries, pitted

1 cup milk

1/4 cup Vermont Creamery Crème Fraîche

1/4 cup sugar

2 teaspoons kirsch, if desired

1 teaspoon vanilla extract

Pinch of salt

6 large eggs

3/4 cup all-purpose flour

Powdered sugar


  • STEP 1

    Heat oven to 425°F.

  • STEP 2

    Butter and flour baking dish. Scatter half of cherries into dish.

  • STEP 3

    Whisk together milk and crème fraîche, with sugar, eggs, kirsch, vanilla, and salt until smooth. Whisk in flour; pour into blender; blend until no lumps remain.

  • STEP 4

    Pour batter into prepared dish. Distribute remaining cherries evenly across surface. Bake 30-32 minutes or until toothpick in center comes out clean and clafoutis is golden brown and puffed up. Dust with powdered sugar. Serve warm.
