Chèvre & Broccoli Rabe Pasta

Creamy and fresh, this pasta dish is light enough for summer dining on the deck. 


16 ounces short grain pasta

1 large bunch broccoli rabe, blanched

2 tablespoons olive oil

1/2 lemon, for juice

1/2 teaspoon red pepper flakes

salt and pepper, to taste

1 teaspoon crushed garlic, if desired

4 ounces Vermont Creamery Crumbled Goat Cheese


  • STEP 1

    Cook pasta according to directions on package. Drain; place into large bowl.

  • STEP 2

    Roughly chop blanched broccoli rabe; add to pasta.

  • STEP 3

    Combine olive oil and juice of half of a lemon in separate bowl, spooning out any seeds that fall into the bowl.

  • STEP 4

    Pour olive oil and lemon dressing over pasta in bowl.  Add red pepper flakes; toss to combine well. Sprinkle crumbled goat cheese over dressed pasta; gently toss to combine.
