French “Tarte aux fraises”

This recipe is the perfect way to celebrate the summer berry season.


2 cups Vermont Creamery Fromage Blanc

1 tablespoon freshly grated lemon zest

2 eggs

2 egg yolks

1/2 cup sugar

1 baked tart crust , or use our favorite crust recipe

2 cups assorted fresh berries


  • STEP 1

    Heat oven to 350°F.

  • STEP 2

    Mix together fromage blanc, lemon zest, eggs, egg yolks and sugar in large bowl.  Fill one 9-inch pie tart shell or four 6-inch tart shells with the mixture. Bake until just slightly brown around the edges and almost set. Remove from oven and cool to room temperature or refrigerate overnight.

  • STEP 3

    Arrange berries on top before serving and glaze with apricot jam (mixed with a little hot water if needed) or sprinkle with confectioned sugar.
