Goat Cheese and Pesto Pasta

1 box spaghetti, reserve 1/2 cup pasta water

10 oz Vermont Creamery Classic Goat Cheese

1/2 cup pesto

2 tablespoons lemon juice

2 tablespoons basil, chopped

1/4 cup walnuts, chopped

salt & pepper to taste


  • STEP 1

    Cook spaghetti or other pasta to box directions

  • STEP 2

    When spaghetti is fully cooked, reserve 1/2 cup pasta water

  • STEP 3

    Drain pasta and set aside

  • STEP 4

    Put still-warmed pot back on stovetop with heat on low

  • STEP 5

    Combine goat cheese and pesto, stirring until just beginning to soften and melt

  • STEP 6

    Add pasta water and lemon juice, stir to combine

  • STEP 7

    Add spaghetti and fold into goat cheese, mix to coat pasta

  • STEP 8

    When ready to serve, sprinkle with basil, walnuts and season to taste
