Harvest Farro Salad With Goat Cheese & Cranberry

This salad combines farro, an ancient grain packed with protein, with fresh goat cheese and sweet cranberries tossed in a light lemon and olive oil dressing.  


1 1/2 cups farro, uncooked

4 cups water

2 tablespoons olive oil

Juice from half of one lemon

Zest from one orange

1/4 cup loosely chopped parsley

1/3 cup dried cranberries

4 ounce Vermont Creamery Classic Goat Cheese

Salt and pepper


  • STEP 1

    Cook farro until tender according to package directions. Drain well; transfer to bowl. Let stand until cooled.

  • STEP 2

    Combine olive oil and lemon juice in small bowl. Add orange zest; mix well.

  • STEP 3

    Chop parsley; add to bowl of cooled farro. Add cranberries, crumbled goat cheese, and dressing. Gently toss.

  • STEP 4

    Season with salt and pepper to taste.
