Kale Caesar Salad

Crisp leaves of kale are tossed in a crème fraîche Caesar dressing made bright with lemon and garlic.  Rustic croutons and shaves of Parmesan make this dish the perfect side or a beautiful main with a hearty serving. 



1 large bunch of Tuscan kale, rinsed

1/3 cup Parmigiano Reggiano cheese , shaved

2 cups rustic croutons


Juice from one large lemon

Olive oil

2 teaspoons Worcestershire sauce

1 large clove garlic, finely grated or chopped

1 cup finely grated Parmesan Reggiano cheese

1/4 cup Vermont Creamery Crème Fraîche

Salt & Pepper to taste


  • STEP 1

    Prepare kale leaves by removing center rib of leaf and tearing leaves into bite-sized pieces.

  • STEP 2

    Juice one lemon into measuring cup. Remove seeds from juice. Add in equal amounts of olive oil as lemon juice.

  • STEP 3

    Add in Worcestershire sauce and grated garlic; mix well with fork or whisk.

  • STEP 4

    Whisk in finely grated cheese and crème fraîche. Add in salt and pepper to taste. Add additional garlic or olive oil as desired.

  • STEP 5

    Pour dressing onto prepared kale leaves; toss well to coat. Add croutons and cheese shavings; gently toss before serving.
