Lamb Burgers With Crumbled Goat Cheese

The Mediterranean inspired flavors of lamb, goat cheese, and mint come together for this quick dinner fix that will take you far beyond your average hamburger.


1/2 European cucumber, thinly sliced

1 teaspoon sea salt

1/2 medium red onion, thinly sliced

2 tablespoons sugar

1 cup apple cider vinegar

1 pound ground lamb

Salt and pepper, to taste

2 pita pockets, cut in half

1 container Vermont Creamery Crumbled Goat Cheese

4 sprigs of fresh mint

4 lettuce leaves, washed


  • STEP 1

    Place cucumber slices into 16 ounce glass jar; sprinkle with sea salt. Cover jar; shake to coat cucumbers with salt.

  • STEP 2

    Add onions and sugar to jar.  Pour cider vinegar to almost fill the jar. Cover; shake until salt and sugar are dissolved. Refrigerate at least one hour or up to one week.

  • STEP 3

    Divide lamb evenly to create 4 patties. Season to taste with salt and ground pepper.

  • STEP 4

    Grill or pan sear the burgers to desired temperature, about 4 minutes per side for medium.

  • STEP 5

    Place burgers into pita pockets. Top each with 2 ounces of Vermont Creamery Crumbled Goat Cheese Classic, 1 sprig of fresh mint, pickled cucumbers and onions, and lettuce leaf.
