Maple Peach Tarts

These maple peach tarts, made with fresh goat cheese and pre-made puff pastry, are quick, easy, and delightfully delicious.  We love these as a fun brunch pastry, or as a dessert that showcases the best produce of the summer.  


1 sheet frozen puff pastry, thawed

4 ounces Vermont Creamery Classic Goat Cheese

1/4 cup maple syrup

2 ripe peaches, sliced

2 tablespoons turbinado or brown sugar

1 tablespoon chopped fresh mint leaves


  • STEP 1

    Heat oven to 400°F.  Line baking sheet with parchment paper; set aside.

  • STEP 2

    Spread puff pastry on counter; cut into nine even squares. Using a paring knife, gently score a line about 1/4-inch from edge of each pastry square, being careful not to cut though. (This will allow edge of tart to puff up higher.)  Place pastry squares onto prepared baking sheet.

  • STEP 3

    Place the fresh goat cheese and maple syrup into small bowl; stir to combine. Spoon generous tablespoon onto center of each pastry square. Gently press slices of peaches on top.

  • STEP 4

    Sprinkle peaches with turbinado sugar. Bake 15-20 minutes or until pastry is puffed and lightly browned.

  • STEP 5

    Sprinkle with chopped mint before serving.
