Mascarpone And Cocoa Swirl Bars

These heavenly dessert bars from Butter Me Up Brooklyn are rich and chocolaty. Pure decadence! 


1/3 cup unsweetened cocoa

3 tablespoons hot water

1 teaspoon canola oil

1/2 cup Vermont Creamery Cultured Butter Basket with Sea Salt- 86% Butterfat melted

1 cup firmly packed brown sugar

1 egg

1 teaspoon vanilla extract

1 (8-ounce) container Vermont Creamery Mascarpone softened

1 cup flour

1/2 teaspoon baking powder

1/2 teaspoon salt

1/8 teaspoon baking soda


  • STEP 1

    Heat oven to 350ºF. Butter an 8-inch square baking pan.  Line with parchment; butter parchment. Set aside.

  • STEP 2

    Whisk together cocoa powder, hot water, and oil in small bowl until a smooth paste forms; set aside.

  • STEP 3

    Whisk together melted butter and brown sugar in another bowl. Whisk in egg and vanilla. Add mascarpone cheese; stir until combined.

  • STEP 4

    Combine flour, baking powder, baking soda, and salt in another bowl; mix into butter mixture until smooth.

  • STEP 5

    Pour about 3/4 of the batter into prepared pan. Add cocoa mixture to batter remaining in bowl; stir until thoroughly combined. Dollop cocoa batter evenly over top of mascarpone batter. Gently swirl together with a toothpick.

  • STEP 6

    Bake 25-30 minutes or until toothpick inserted near center comes out clean. Cool completely. Cut into bars. Store any remaining bars in refrigerator.
