Pairing: Coupole + Sweater Weather

Wedges of Coupole layered with lightly pan fried dates & seasoned charcuterie on crusty bread make for a hearty start to any meal.  Paired with this Sweater Weather cocktail makes for a lovely evening by the fire.

Ingredients

Cheese Pairing

Vermont Creamery Coupole room temperature

Fresh baguette, cut into slices

Artisan salami like Creminelli

Maple cream like Tonewood Maple Cream

fried dates

Sweater Weather Cocktail

2 ounces Aged Gin, like Stonecutter Spirits Single Barrel Gin

3 slices apple

1/2 ounce lemon juice

1/2 cinnamon syrup

2 dashes aromatic bitters

Absinthe rinse , (optional)

Fresh thyme sprig

Directions

  • STEP 1

    Slice coupole into wedges and salami into rounds. Spread a thin layer of maple cream on sliced rounds of baguette. Layer maple cream bread with salami, date and top with coupole cheese.

  • STEP 2

    Combine aged gin, apple slices, lemon juice, cinnamon syrup, and bitters in shaker. Shake for 8-12 seconds and strain into coupe glass. (Optional: rinse a chilled glass with absinthe before adding cocktail.) Garnish with fresh thyme sprig.
