Pumpkin Goat Cheese Cheesecake

Light and creamy pumpkin and goat cheese combined with a pretzel crust, perfectly balanced with salty and sweet - Buttercream Blondie seals the deal with this Thanksgiving dessert.


Pretzel Crust

4 ounces pretzel crisps

2 tablespoons firmly packed light brown sugar

1/4 teaspoon ground cinnamon

2 ounces Vermont Creamery Unsalted Cultured Butter - 82% Butterfat melted

Pumpkin Goat Cheese Cheesecake

16 ounces cream cheese, softened

8 ounces Vermont Creamery Classic Goat Cheese softened

3/4 cup sugar

1/2 cup firmly packed light brown sugar

1 teaspoon ground cinnamon

3/4 teaspoon ground ginger

1/4 teaspoon ground nutmeg

1/4 teaspoon ground cloves

4 eggs

1 teaspoon vanilla bean paste

1/2 cup sour cream

15 ounces pumpkin


  • STEP 1

    Heat oven to 375°F.

  • STEP 2

    Grind pretzels in food processor. Mix with 2 tablespoons brown sugar and 1/4 teaspoon cinnamon. Mix in melted butter. Press crust into a 9-inch springform pan. Bake 6-8 minutes  or until lightly browned.

  • STEP 3

    Wrap outside of springform pan with 2 layers of plastic food wrap. Next wrap it in aluminum foil.

  • STEP 4

    Reduce oven temperature to 325°F.

  • STEP 5

    Beat cream cheese and goat cheese on medium speed in mixer bowl. Add granulated and light brown sugars; continue to beat, scraping bowl often, until light and creamy. Add cinnamon, ginger, nutmeg, and cloves; continue to mix. Add eggs, one at a time, beating on low to medium speed after each addition just till combined. Add vanilla. Mix in sour cream and pumpkin on low speed just until incorporated.

  • STEP 6

    Pour batter into prepared springform pan.  Place pan into roasting pan. Fill roasting pan about half way with hot water. Bake 1 hour; rotate cheesecake. Continue baking 45-55 minutes or until set.
