Shaved Asparagus Salad With Goat Cheese

Dig into this hearty and vibrant salad made with shaved asparagus, spring peas, and microgreens tossed in a lemon and crème fraîche dressing and a sprinkle of chopped pistachios.


Crème Fraîche Dressing

1/4 cup Vermont Creamery Crème Fraîche

1 teaspoon honey

1 teaspoon chiffonade mint leaves

1/2 teaspoon freshly grated lemon zest

Juice of one lemon

2 tablespoons olive oil

Salt & pepper


3 cups watercress or mesclun

2 cups asparagus, shaved

1/2 cup microgreens

1/2 cup fresh or frozen peas, thawed if frozen

2 ounces Classic Vermont Creamery Goat Cheese

1/4 cup unshelled pistachios, chopped


  • STEP 1

    Combine creme fraiche, honey, mint, lemon zest and juice in measuring cup or small bowl.

  • STEP 2

    Drizzle in olive oil, while stirring constantly.  Season with salt and pepper to taste.

  • STEP 3

    Place watercress or mesclun, shaved asparagus, microgreens and peas in large bowl.  Pour crème fraîche dressing over top; toss lightly to coat.

  • STEP 4

    Gently crumble goat cheese on top of dressed greens; sprinkle with chopped pistachios.
