Cherry Clafoutis with Crème Fraîche

  • 1 pound cherries, pitted

  • 1 cup milk

  • Vermont Creamery Crème Fraîche

    ¼ cup

  • ¼ cup granulated sugar

  • 2 teaspoons kirsch, if desired

  • 1 teaspoon vanilla extract

  • pinch salt

  • 6 large eggs

  • ¾ cup all-purpose flour

  • Powdered sugar


  1. Heat oven to 425ºF.
  2. Butter and flour baking dish. Scatter half of cherries into dish.
  3. Whisk together milk and crème fraîche, granulated sugar, eggs, kirsch, vanilla and salt until smooth. Whisk in flour; transfer to blender. Blend until no lumps remain.
  4. Pour batter into prepared baking dish. Arrange remaining cherries evenly on surface. Bake 30-32 minutes or until toothpick in center comes out clean and clafoutis is golden brown and puffed up. Dust with powdered sugar. Serve warm.
