Cherry Clafoutis with Crème Fraîche

  • 1 pound cherries, pitted

  • 1 cup milk

  • Vermont Creamery Crème Fraîche

    ¼ cup

  • ¼ cup sugar

  • 2 teaspoons kirsch, if desired

  • 1 teaspoon vanilla extract

  • Pinch of salt

  • 6 eggs

  • ¾ cup all-purpose flour

  • Powdered sugar


  1. Heat oven to 425º
  2. Butter and flour baking dish. Scatter half of cherries into dish
  3. Whisk together milk and crème fraîche, with sugar, eggs, kirsch, vanilla, and salt until smooth. Whisk in flour; pour into blender; blend until no lumps remain
  4. Pour batter into prepared dish. Distribute remaining cherries evenly across surface. Bake 30-32 minutes or until toothpick in center comes out clean and clafoutis is golden brown and puffed up. Dust with powdered sugar. Serve warm.
