What is Cultured Butter?

Our expert buttermakers carefully add live bacterial cultures to fresh Vermont cream. The cream ferments overnight; by morning, it's thickened and wonderful notes of buttermilk and hazelnuts have developed.

Making cultured butter is much like making wine, you want to ferment your cream like your grapes, slowly, to produce the best flavors.  The longer you culture — the better.

Brown Butter Ice Cream

We added candied toasted pecans and dark chocolate to this brown butter ice cream which makes it an even more decadent treat. Browning the butter makes the ice cream base particularly fragrant and flavorful. It takes a little bit of extra time to make ice cream, but is well worth the effort.
