Fresh Goat Cheese Flatbread

This flatbread recipe is a combination of sweet & savory flavors.  Perfect for a weeknight dinner alongside a salad. 


4 ounces pancetta, diced

1 medium onion, sliced into rings

3 tablespoons fig spread

4 ounces Vermont Creamery Classic Goat Cheese

1 store bought pizza shell


  • STEP 1

    Render pancetta in large pan. Remove with a slotted spoon and drain.

  • STEP 2

    In same pan with pancetta drippings, caramelize onions until brown and soft. Set aside.

  • STEP 3

    Spread fig jam on pizza shell. Sprinkle pancetta and onions evenly over the jam. Crumble fresh goat cheese on top of flatbread.

  • STEP 4

    Bake according to pizza package instructions.
