Bagel-Spice Carrots with Fresh Goat Cheese
4 pounds carrots, scrubbed, trimmed
3 tablespoons extra-virgin olive oil
2 tablespoons Everything Bagel seasoning
Vermont Creamery Goat Cheese, crumbled
1 tablespoon chopped fresh parsley
- Heat oven to 400ºF.
- Place carrots on large rimmed baking sheet; drizzle with oil. Toss to coat. Sprinkle evenly with bagel seasoning. Roast, flipping carrots halfway through, 20-30 minutes or until fork-tender.
- Arrange carrots on serving plate. Top with goat cheese and parsley. Serve immediately with additional bagel seasoning as desired.
