  • 4 salmon fillets

  • ¼ cup white wine

  • 1 shallot, chopped

  • 1 teaspoon ground red pepper (cayenne)

  • Salt and pepper, to taste

  • Vermont Creamery Crème Fraîche

    ¼ cup

Directions

  1. Heat broiler.
  2. Place salmon and wine in shallow baking dish. Garnish with shallot, cayenne, salt and pepper.
  3. Spread crème fraîche over top of salmon.
  4. Place under broiler in lower part of oven. Broil 20-25 minutes or until salmon flakes with fork.
