  • 4 salmon fillets

  • ¼ cup white wine

  • 1 shallot , chopped

  • Salt and pepper, to taste

  • 1 teaspoon cayenne pepper powder

  • Vermont Creamery Crème Fraîche

    4 tablespoons

Directions

  1. Heat broiler
  2. Place salmon and wine in shallow baking dish. Garnish with chopped shallot, salt, pepper, and cayenne
  3. Spread crème fraîche on top of salmon
  4. Place under broiler in lower part of oven. Broil 20-25 minutes or until salmon flakes with a fork
  5. Serve with basmati rice and green beans or blanched asparagus sautéed in Vermont cultured sea salt butter.
