Watermelon and Fresh Goat Cheese Salad
½ cup candied pecans
½ cup canola oil
¼ cup vinegar
⅛ cup water
1 tablespoon lemon juice
3 tablespoons maple syrup or sugar
½ tablespoon garlic salt
2 butter lettuce or preferred greens
4 cups watermelon, cut into large wedges
Vermont Creamery Classic Goat Cheese
- Place oil, red wine vinegar, water, lemon juice, maple syrup, and garlic salt in medium bowl. Whisk to combine well; set aside.
- Tear or slice lettuce and divide among individual plates or place into large salad bowl. Top with watermelon wedges, crumbled goat cheese, and candied pecans.
- Drizzle dressing over salads. Refrigerate remaining dressing.
