Watermelon and Fresh Goat Cheese Salad

  • ½ cup candied pecans

  • ½ cup canola oil

  • ¼ cup vinegar

  • ⅛ cup water

  • 1 tablespoon lemon juice

  • 3 tablespoons maple syrup or sugar

  • ½ tablespoon garlic salt

  • 2 butter lettuce or preferred greens

  • 4 cups watermelon, cut into large wedges

  • Vermont Creamery Classic Goat Cheese

  1. Place oil, red wine vinegar, water, lemon juice, maple syrup, and garlic salt in medium bowl. Whisk to combine well; set aside.
  2. Tear or slice lettuce and divide among individual plates or place into large salad bowl. Top with watermelon wedges, crumbled goat cheese, and candied pecans.
  3. Drizzle dressing over salads. Refrigerate remaining dressing.
