Bagel-Spice Roasted Carrots with Fresh Goat Cheese

Ingredients

4 pounds multicolor carrots, scrubbed, trimmed

3 tablespoons extra-virgin olive oil

2 tablespoons Everything Bagel seasoning

4 ounces Vermont Creamery Goat Cheese crumbled

1 tablespoon chopped fresh parsley

Directions

  • STEP 1

    Heat oven to 400°F.

  • STEP 2

    Place carrots on large rimmed baking sheet; drizzle with oil. Toss to coat. Sprinkle evenly with bagel seasoning. Roast, flipping carrots halfway through, 20-30 minutes or until fork-tender.

  • STEP 3

    Arrange carrots on serving plate. Top with goat cheese and parsley. Serve immediately with additional bagel seasoning as desired.
