  • 4 pounds carrots, scrubbed, trimmed

  • 3 tablespoons extra-virgin olive oil

  • 2 tablespoons Everything Bagel seasoning

  • Vermont Creamery Goat Cheese, crumbled

    4 ounces

  • 1 tablespoon chopped fresh parsley

Directions

  1. Heat oven to 400ºF.
  2. Place carrots on large rimmed baking sheet; drizzle with oil. Toss to coat. Sprinkle evenly with bagel seasoning. Roast, flipping carrots halfway through, 20-30 minutes or until fork-tender.
  3. Arrange carrots on serving plate. Top with goat cheese and parsley. Serve immediately with additional bagel seasoning as desired.
