Baked St. Albans with Herb Roasted Fingerling Potatoes

Spoon melted St. Albans over crisp herb seasoned potatoes in this simple yet decadent dish.  


2 pounds fingerling potatoes, sliced lengthwise

3 tablespoons olive oil

Finely chopped seasonal herbs, such as rosemary or thyme

Maldon sea salt

  • STEP 1

    Heat oven to 400°F.

  • STEP 2

    Place potatoes onto baking sheet; drizzle with olive oil. Sprinkle with chopped herbs and salt. Toss to coat.

  • STEP 3

    Bake 10–15 minutes.  Place crock of St. Albans onto baking sheet.  Continue baking 10 minutes or until potatoes are lightly browned and cheese is melted.

  • STEP 4

    To serve, spoon warm cheese over potatoes.
