Southwestern Grain Bowl

This grain bowl is a favorite of ours and reheats well for lunches. It's simple to make and packed with flavor and protein. Plus, it's topped with Crème Fraîche Ranch Dressing. You're welcome!



2 cups Farro, cooked

8 ounces grilled chicken, sliced

1 cup black beans, drained and rinsed

4 ounces Vermont Creamery Smoky Pepper Jelly Goat Cheese  

1 cup sliced tomatoes

1 cup grilled corn

1 avocado

1/2 red onion, finely chopped

1/2 cup cilantro leaves

1 lime

Crème Fraîche Ranch Dressing

1 clove garlic, crushed

1/2 cup Vermont Creamery Crème Fraîche

1 tablespoon finely chopped fresh parsley

1 tablespoon finely chopped fresh chives

1 teaspoon Worchester sauce

1/4 teaspoon dried dill

freshly squeezed lemon juice

1/2 cup milk

Salt and pepper to taste

 You can substitute your favorite flavor of Vermont Creamery goat cheese.


  • STEP 1

    Portion out farro, chicken, beans, cheese, tomatoes, corn, avocado, onion and cilantro into four serving bowls. Squeeze lime over bowl ingredients.

  • STEP 2

    Place crème fraîche, parsley, chives, Worchester sauce, garlic, and dill into small bowl; mix well.
    Add squeeze of fresh lemon juice. Stir in milk until desired consistency; season with salt and pepper to taste.

  • STEP 3

    Drizzle bowl ingredients with the crème fraîche ranch dressing.
