  • 3 tablespoons olive oil

  • 1 tablespoon apple cider vinegar

  • 1 teaspoon fresh garlic

  • 1 teaspoon maple syrup

  • ½ teaspoon salt

  • ¼ teaspoon pepper

  • 6 cups seedless watermelon

  • ⅔ cup red onion

  • 1 tablespoon fresh basil leaves

  • 1 tablespoon fresh mint leaves

  • ½ teaspoon salt

  • Vermont Creamery Classic Goat Cheese, crumbled

Directions

  1. Combine dressing ingredients in small bowl; whisk to combine
  2. Combine watermelon, onions, basil, mint, and salt in large bowl. Pour dressing over and toss to coat watermelon. Refrigerate for 30 minutes before serving
  3. Spoon salad onto serving platter. Just before serving, crumble goat cheese on top of salad.
