Watching popovers “pop” is always a thrill - just don’t open the oven door! Even better slathered with butter, these melt-in-your-mouth popovers deliver.


1/4 cup Vermont Creamery Sea Salt Cultured Butter - 82% Butterfat melted

6 large eggs, room temperature

2 1/2 cups whole milk, room temperature

2 1/2 cups all-purpose flour

1/2 teaspoon salt


  • STEP 1

    Heat oven to 450°F. Pour melted butter into wells of 12 popover pan cups.

  • STEP 2

    Beat eggs in bowl at high speed, scraping bowl often, 2 minutes or until foamy, light and lemon-colored. Add milk; continue beating 1 minute. Add flour and salt; beat until well mixed.

  • STEP 3

    Pour batter into prepared popover pan. Bake on middle oven rack 15 minutes.

  • STEP 4

    Reduce oven temperature to 350°F. Do not open oven door. Continue baking 20-25 minutes or until deep golden brown. Insert knife into popovers to allow steam to escape. Serve immediately with additional butter for spreading.
