Watermelon and Fresh Goat Cheese Salad

This watermelon and fresh goat cheese salad is easy to assemble and super refreshing on a hot day. 


1/2 cup candied pecans

1/2 cup canola oil

1/4 cup red wine vinegar

1/8 cup water

1 tablespoon lemon juice

3 tablespoons maple syrup or sugar

1/2 tablespoon garlic salt

2 (small-medium ) heads butter lettuce or preferred greens

4 cups watermelon, cut into large wedges

4 ounce Vermont Creamery Classic Goat Cheese Crumbles


  • STEP 1

    Place oil, red wine vinegar, water, lemon juice, maple syrup, and garlic salt in medium bowl. Whisk to combine well; set aside.

  • STEP 2

    Tear or slice lettuce and divide among individual plates or place into large salad bowl. Top with watermelon wedges, crumbled goat cheese, and candied pecans.

  • STEP 3

    Drizzle dressing over salads. Refrigerate remaining dressing.
