  • ½ ounce blueberry-grapefruit shrub

  • ¼ ounce cucumber-infused Pimm's

  • ¾ ounce whiskey

  • ¾ ounce single barrel gin


to make blueberry grapefruit shrub

  1. Combine 1 cup water and 1 cup sugar in small saucepan. Heat until sugar is dissolved. Stir in 1 pint blueberries and 1 pink grapefruit (zested and quartered); heat until blueberries pop. Remove from heat; strain out fruit. Add 2/3 cup plus 2 tablespoons cider vinegar. Stir to combine.

to make cucumber-infused pimm's

  1. Peel and seed 1 English cucumber. Combine with 1 bottle Pimm's in large glass container. Allow to infuse 3 days; strain cucumber out.

to make the cocktail

  1. Combine ½ ounce shrub, ¼ ounce Pimm’s, whiskey and gin in shaker glass; fill with ice. Shake 8-12 seconds. Strain into rocks glass filled with ice. Garnish with fresh thyme sprig.
