Pan-Roasted Green Beans with Candied Almonds and Fresh Goat Cheese

A fresh take on traditional green beans, this dish tops buttery and crisp-tender green beans with creamy goat cheese and sweet, crisp almond slices.


Candied Almonds

1 tablespoon Vermont Creamery Sea Salt Cultured Butter - 82% Butterfat

2 tablespoons sugar

2 ounces (2/3 cup) sliced almonds

Green Beans

2 pounds fresh green beans, trimmed

1/2 cup water

2 tablespoons Vermont Creamery Sea Salt Cultured Butter - 82% Butterfat

1 cup julienned onion

1/2 teaspoon Kosher salt

1/4 teaspoon pepper

2 ounces Vermont Creamery Goat Cheese crumbled


  • STEP 1

    LIne baking sheet with parchment paper. Melt 1 tablespoon butter in nonstick skillet over medium-low heat. Add sugar; stir until dissoved. Add almonds; cook, stirring occasionally, 3-5 minutes or until almonds begin to brown. Immediately spread onto prepared baking sheet. Cool completely.

  • STEP 2

    Combine green beans and water in 12-inch sauté pan with high sides; cover. Cook over medium-high heat 5 minutes. Uncover; cook until water is evaporated. Reduce heat to medium; add 2 tablespoons butter, onion, salt and pepper. Sauté until onion is cooked and beans are browned in spots. Remove to serving plate. Top with goat cheese and candied almonds. Serve immediately.
